correction on the cookie recipe!!!

opps!!! i forgot to add that i use namaste gluten free and free of the common 8 allergens instead of wheat flour...it works great!!!!!

please note: these recipes are not allergen free, but allergy friendly.........and you should always always read all of the labels and ingredients of everything you cook and eat if you have food allergies!!!!

best vegan/allergen free chocolate chip cookie recipe I've found!

They are better as drop cookies , they seemed harder when I tried to make them into bars. It was really hard for me to find an egg free cookie recipe that the cookies weren't hard as a rock. If anyone know a good egg free, nut free, dairy free, gluten free brownie recipe please let me know...I still haven't figured those out!

makes 2 1/2 - 3 doz.
Ingredients with measurements:

1 c. dairy-free margarine.... I use organic veg shortening instead of earth balance, seems to work great.
1/2 c. brown sugar
1/2 c. sugar
1/4 c. soy milk or rice milk
2 tsp. vanilla extract
2 1/4 c. unbleached flour
1/2 tsp. salt
1 tsp. baking soda
12 oz. semi-sweet chocolate chips or chopped chocolate** Enjoy life makes allergen free chocolate chips that are great...if you can eat soy whole foods makes a great vegan chocolate chip that is less expensive. and just as good!

Instructions:

Need: Cookie sheets and a hand mixer

1: Preheat the oven to 350°F.

2: If not using chocolate chips, chop semisweet chocolate baking bar into small chunks the appropriate size for cookies. Set aside.

3: Cream together shortening and both sugars until light and fluffy. Add soy or rice milk, and cream. Mix in vanilla extract. It might look a little curdled, that is fine.

4: Combine the dry ingredients in a mixing bowl. Add the dry ingredients to the creamed mixture, then fold in the chocolate chunks or chips.

5: Drop by teaspoons on greased cookie sheets. Bake at 350°F degrees for 8-10 minutes. Remove from baking sheet and cool on racks.
