correction on the cookie recipe!!!

opps!!! i forgot to add that i use namaste gluten free and free of the common 8 allergens instead of wheat flour...it works great!!!!!

please note: these recipes are not allergen free, but allergy friendly.........and you should always always read all of the labels and ingredients of everything you cook and eat if you have food allergies!!!!

best vegan/allergen free chocolate chip cookie recipe I've found!


I found this cookie recipe on line and it is the best one I have found that doesn't need eggs. Here is the link if you want to check that out or the recipe is below!

They are better as drop cookies , they seemed harder when I tried to make them into bars. It was really hard for me to find an egg free cookie recipe that the cookies weren't hard as a rock. If anyone know a good egg free, nut free, dairy free, gluten free brownie recipe please let me know...I still haven't figured those out!

makes 2 1/2 - 3 doz.
Ingredients with measurements:

1 c. dairy-free margarine.... I use organic veg shortening instead of earth balance, seems to work great.
1/2 c. brown sugar
1/2 c. sugar
1/4 c. soy milk or rice milk
2 tsp. vanilla extract
2 1/4 c. unbleached flour
1/2 tsp. salt
1 tsp. baking soda
12 oz. semi-sweet chocolate chips or chopped chocolate** Enjoy life makes allergen free chocolate chips that are great...if you can eat soy whole foods makes a great vegan chocolate chip that is less expensive. and just as good!

Instructions:

Need: Cookie sheets and a hand mixer

1: Preheat the oven to 350°F.

2: If not using chocolate chips, chop semisweet chocolate baking bar into small chunks the appropriate size for cookies. Set aside.

3: Cream together shortening and both sugars until light and fluffy. Add soy or rice milk, and cream. Mix in vanilla extract. It might look a little curdled, that is fine.

4: Combine the dry ingredients in a mixing bowl. Add the dry ingredients to the creamed mixture, then fold in the chocolate chunks or chips.

5: Drop by teaspoons on greased cookie sheets. Bake at 350°F degrees for 8-10 minutes. Remove from baking sheet and cool on racks.

the best vegan and allergy free chocolate cake ever!!!!!!



So, at every occasion and at least once a week I make this cake...................everyone loves it, even raves about and to top it off, it is so easy!!!! It is vegan, gluten, dairy, nut, egg, corn free. The only allergen food in it is soy and god help you if you are allergic to chocolate!!!!!!!

I start with Betty Crocker's gluten free chocolate cake...I use earth balance instead of butter and egg re-placer instead of eggs. Bake as the box says....350 for 36 min. I believe.

*If you can't eat soy, try Pamela's Products chocolate cake, it is also one of the best but Kline can't eat it because it is made in a facility with dairy , it is also more expensive than Betty Crocker's gluten free.

**You can subscribe and save on www.amazon.com for a lot of these products and it makes them the least expensive place that I have found them.

Let the cake cool and here comes the super easy, super yummy icing..........

Chocolate Icing!!

1/4 cup organic palm /veggie shortening or earth balance

1/3 cup coco powder...allergy friendly! read read read the labels!

2 cups of powdered sugar, puts any diabetic into a coma! ;~/

1 tsp vanilla

2-3 tbsp of water....and mix with an electric mixer...adding a small amount of water as you go to get the texture that you would like. ice cake and decorate with allergy friendly sprinkles.


Vanilla icing!

see as above but omit coco powder and you can add food coloring to your liking!

Kline and I were featured in abcnews.com for food allergies!!




I am starting this blog to hopefully help others, and ourselves , who are dealing with food allergies. I hope this will be a good support to families out there that are isolated like Kline, unable to eat out or go to other peoples houses for play dates in case he may pick up one of his allergy foods. Kline is severely allergic to eggs, dairy, and nuts and has been since birth! Hopefully, I'll be able to share what our life is like living with food allergies and have some helpful hints and recipes for others whose kiddos have food allergies.
